Description:
 

This seaweed technology called Fruity Cubes is a candy gel made from seaweed polysaccharides.  This consists of a  mixture of two types of carrageenan - the kappa and iota to produce a gummy textured candy gel.  Since this gel comes purely from plant source, persons with dietary or religious restrictions can eat this candy. This was developed by Dr. Nemesio E. Montaño and Ms. Banaag Glorioso-Lajera of the UP Marine Science Institute.

The candy preparation uses a mixture of kappa and iota carrageenan, potassium salt, fruit acid, sugar, water, food color and fruit flavors.  The Process of cooking includes mixing, boiling, freezing and cooling the gel overnight to produce the gummy texture, oven-drying and packaging.

The equipment needed in producing the candy gel includes gas stove, mixer, blender, vats, oven and moulders.
